Kodiak Cakes Banana Bread
Have you ever heard of Kodiak Cakes? I hadn't for a long time, since I wasn't a Costco shopper, so my friends weren't surprised I didn't know what they were talking about when they raved about them. Finally, I was tired of hearing about them and decided I had to try them for myself.
Looking at the box, I was intrigued by them, as they can be made various ways and the box indicates how their nutritional value changes based on preparation method. If you just add water to 1/2 cup of the mix, there is 14 grams of protein. The protein content goes up to 18 grams if made with milk, and 21 grams if made with milk and an egg. I also like that the mix is made of whole grain wheat and oat flours, and that there is only 3 grams of sugar in 1/2 cup of mix.
I was going through my pantry the other week and came across a box of Kodiak Cakes that I forgot I had. I had also been really wanting banana bread lately, so decided it would be worth trying to make banana bread using the Kodiak Cakes. I did some looking online for a recipe that would fit what I wanted, but I couldn't find anything. All the recipes I found either used flour instead of Kodiak Cakes, had what I thought was too much of some ingredient (usually oil, syrup or honey), or didn't have some ingredient I wanted to use (in this case, applesauce). So I found a recipe that was alright, but then made some substitutions to make it fit what I was looking for and this is what I came up with.
Kodiak Cakes Banana Bread
Ingredients:
2 eggs
1/2 cup applesauce
1/3 cup honey
1/4 cup milk
1 teaspoon vanilla extract
2-3 medium bananas, mashed (enough to equal approx. 1 cup)
1 3/4 cup Kodiak Cakes Flapjack and Waffle Mix
1/2 cup dark chocolate chips*
*NOTE: Get creative - chocolate chips can be replaced with nuts, seeds or dried fruit to reduce the added sugar and add healthier fats
Directions:
1. Preheat oven to 325 degrees F (165 degrees C). Lightly grease one 9x5 inch pan
2. Mash bananas in small bowl. Beat eggs, applesauce, honey, milk and vanilla in large bowl, then add bananas. Whisk until well mixed.
3. Add Kodiak Cakes and chocolate chips or add in of choice.
4. Pour batter into a greased pan and bake for 50-55 minutes until a toothpick inserted into centre comes out clean. Let cool 10 minutes then slice and enjoy.
TIP: If not going to enjoy all within couple of days, slice entire loaf before freezing, to make for easier serving later. Or, consider wrapping one or two slices in plastic wrap and freezing to make it easy to grab a slice from the freezer to throw into a bagged lunch, for a snack or a dessert.
